lemon cake batter truffles


Have you heard of Cake Batter Truffles?

They're made using cake mix (from a box) and a few other ingredients. They're incredibly moist and tender . . .alot like a traditional chocolate truffle in texture.

                      Here's the best part . . . there's no baking involved, just mixing and refrigerating.

I made traditional Cake Batter Truffles for the first time here. Aren't they pretty with rainbow sprinkles!


Since we're quickly approaching the end of Summer, I thought it would be fun to make                                                  a lemon version.


They're easy and fun to make, as well as eat . . . with their crisp chocolate shell and soft, sweet interior.

        If you like lemon, then you'll love these petite lemon truffles!

I think they're just perfect for a Summer picnic or Shower!

Here's what you need . . .
1/2 cup unsalted butter, softened
1/2 cup sugar
1 1/2 cups flour
1 cup LEMON cake mix, dry
Zest of 1 small lemon
1 tsp. vanilla
3 Tablespoon milk 
1/8 tsp. salt
2 Tbsp. sprinkles
16 oz white dipping chocolate or Almond Bark
           (I prefer Almond Bark)


Preparation
Beat together butter and sugar using an electric mixer until combined. Add lemon zest. Blend in vanilla. Add cake mix, flour, salt, and vanilla and mix thoroughly. Add 1 Tablespoon of milk or more, if needed, to make a dough consistency. Mix in sprinkles by hand. Roll dough into one inch balls and place on a parchment or wax paper lined cookie sheet. Chill balls in the refrigerator for 15 minutes to firm up.

While dough balls are chilling, melt almond bark in the microwave in 30 second intervals until melted. Stir between intervals. Using a fork, dip truffles into almond bark and shake of excess bark by tapping the bottom of the fork on the side of your bowl. Place truffle back on the cookie sheet and top with sprinkles. Repeat with remaining balls until finished. 

Chill cake batter truffles in the refrigerator until serving. 

Makes around 24-30 truffles.

  28. They look and sound great, but I still worry about eating raw flour! Even in the cake mix. I have made lemon truffles with lemon pound cake and cream cheese. Sometimes I will add extra lemon juice and zest. Lemon Girl Scout cookies also make awesome truffles! I will still give this recipe a try.

  29. I just made these, and I gotta tell ya, they came out a weird gray color and it's like chomping into lemon fudge. Your picture make them look fluffy and delicious, but mine turned out really gross. I have an event tomorrow and I'm going to have to come up with something else similar, as these are already printed on the menu! Very disappointed :(

    1. Hmmmmm . . . I'm sorry to read that your truffles didn't come out. The texture and color you described sounds odd. I wonder if the kind of vanilla you used - lended to the gray color? As for the texture - I'm not sure what might've happened? I haven't had that problem before, so I'm not sure how to remedy that. Sorry.
      Perhaps making lemon truffles the more traditional way - by crumbling a baked lemon cake, adding lemon frosting to it until you reach a desired texture, rolling into balls, and then dipping in white chocolate --- will give you better results?
      I hope you find a successful and delicious alternative recipe for your event!

    3. Thanks for the quick response! I'm still very unsure what happened...I don't usually have issues with desserts/baked goods!! I ended up just making a vanilla pound cake and pouring lemon glaze over top, but I still wish mine had come out looking like yours did :)

  31. I made these last week and they were delicious! However, a day later the bark had split, or the batter oozed out of the bottom, like a playdoh press. I have no idea why this batter would have expanded. Ideas?

  32. I would love to make these for my best friend's baby shower. I have never used Almond Bark before and have read of people having issues with it seizing up. Have you ever had issues with that? Any tips for using it?
