This gorgeous drink was inspired by a similar one that I saw in a recent issue of Bon Appetit.
Instead of using strawberries, I added blackberries . . . and it was so delicious!
the buttermilk adds a unique tang . . . .
and the coconut milk gives it a smooth finish.
blackberry & coconut lassi

Puree 1 1/2 cups blackberries, 2/3 cup ice, 1/2 cup buttermilk,
1/3 cup unsweetened coconut milk, and 1 Tablespoon sugar in a blender until smooth and frothy. Makes 2.

ReplyDeletewhat is a Lassi? Your blackberries look fabulous, I'm hoping to dig some up in the fall (my friend is trying to get them out of her yard) and move them to my yard. I adore black berry anything. I wonder if we can make this with almond milk and coconut? we are dairy free.

DeleteI was introduced to "Lassi's" for the first time by our friends. Lassi is a popular, traditional, yogurt-based drink, originating India. They're typically a blend of yogurt, water, spices, and sometimes, fruit. I love them both ways!
They're a refreshing drink, especially in the Summer.
You could absolutely make it with almond milk. It will lack the "tangy" flavor, but would taste good.
