blackberry~coconut lassi

This gorgeous drink was inspired by a similar one that I saw in a recent issue of Bon Appetit.

Instead of using strawberries, I added blackberries . . . and it was so delicious!

The blackberries give this lassi its sweetness and gorgeous color . . .

                                       the buttermilk adds a unique tang . . . .
and the coconut milk gives it a smooth finish.

Puree 1 1/2 cups blackberries, 2/3 cup ice, 1/2 cup buttermilk,
1/3 cup unsweetened coconut milk, and 1 Tablespoon sugar in a blender until smooth and frothy. Makes 2.

Our little ones enjoyed it too!

It's a vibrant and delicious Summery drink!

My thoughts . . .
Light lemon cookies served alongside a  blackberry~coconut lassi
just might be
the perfect Summer dessert!

bon appetit!

  1. Happy Pink Saturday on Sunday :)
what is a Lassi? Your blackberries look fabulous, I'm hoping to dig some up in the fall (my friend is trying to get them out of her yard) and move them to my yard. I adore black berry anything. I wonder if we can make this with almond milk and coconut? we are dairy free.

    1. Hi CailinMarie!

I was introduced to "Lassi's" for the first time by our friends. Lassi is a popular, traditional, yogurt-based drink, originating India. They're typically a blend of yogurt, water, spices, and sometimes, fruit. I love them both ways!
They're a refreshing drink, especially in the Summer.
You could absolutely make it with almond milk. It will lack the "tangy" flavor, but would taste good.

  2. 3 Studies SHOW How Coconut Oil Kills Waist Fat.

The meaning of this is that you actually burn fat by consuming Coconut Fats (including coconut milk, coconut cream and coconut oil).

These 3 researches from major medical journals are sure to turn the conventional nutrition world upside down!
