blackberry crumble sundae

 

So here's a Blackberry Crumble de-constructed!

What I love most about this sundae is its versatility.

If you don't like blackberries, then mix it up and add strawberries or raspberries.

I think sweet peaches at the peak of their season would taste quite amazing in this sundae! 

 

The shortbread crumbles on top are what make this so special.

Made of brown sugar, oats, flour and butter . . . the crumbles add a hearty cobbler pie affect.

             So. darn. good.

My husband, an ice cream connoisseur, said "Wow, now that sundae was satisfying and great. Good job, honey."  

I know it's good when it passes his test!


The recipe makes quite a bit of oat CRUMBLES, which is great . . . because then you'll have them on hand for future sundaes. 

I keep a zip-lock bag of them in my freezer for when I need to prepare a quick dessert for unexpected visitors. 

With ripe berries and gorgeous Summer fruits at our fingertips, 
I can't see a better way to celebrate their sweetness and beauty!

 

Here's what you'll need . . . 
to make CRUMBLES
2 sticks butter, softened, plus more for the pan
2 1/4 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup light brown sugar
1 cup rolled oats
1/4 teaspoon fine sea salt
1 egg, beaten
YOU'LL ALSO NEED . . .
1 cup Blackberry Preserve 
1 cup fresh blackberries
Vanilla Ice Cream
Mint sprig for garnish *optional


Directions
Preheat the oven to 350 degrees F. 
Add the flour, both sugars, oats and salt to a bowl in your stand mixer.
Add in the butter and egg and beat at low speed.
Stop the machine and scrape the bowl down a couple of times. Keep processing until the mixture resembles coarse crumbs.


Crumble the oat mixture over a baking sheet.

 

Bake until lightly browned, 18 to 20 minutes.

 

Cool completely before crumbling into baked pieces. 

The crumbles can be made ahead of time and kept in a zip-lock bag.


In the meantime, heat 1 cup of Blackberry Preserve in a small saucepan on LOW heat until it's the consistency of syrup.

 

Assemble your Blackberry Crumble Sundae . . .

Two scoops of vanilla ice cream
Drizzle desired amount of blackberry syrup over ice cream
Add crumble topping & fresh blackberries
 . . . and enjoy!

blackberry~coconut lassi



This gorgeous drink was inspired by a similar one that I saw in a recent issue of Bon Appetit.

Instead of using strawberries, I added blackberries . . . and it was so delicious!




The blackberries give this lassi its sweetness and gorgeous color . . .

                                       the buttermilk adds a unique tang . . . .
     
         and the coconut milk gives it a smooth finish.

Puree 1 1/2 cups blackberries, 2/3 cup ice, 1/2 cup buttermilk, 
1/3 cup unsweetened coconut milk, and 1 Tablespoon sugar in a blender until smooth and frothy. Makes 2.

          Our little ones enjoyed it too!

It's a vibrant and delicious Summery drink!

the best ever blackberry mint lemonade



I love lemonade!

And although I love just a simple glass of lemonade, I've become quite smitten with flavored ones as well.

You know, the ones that are infused with things like mint, fruits, vanilla, and even herbs.

Vanilla Bean Lemonade won my heart; that is, until I made THIS refreshing blackberry lemonade infused with mint.


Oh. my. gosh.

It is soooo good.

The sweet factor in this lemonade is a MINT infused simple syrup! YUM!

There's something magical about adding infused simple syrups to drinks.

Boiling water and sugar allows the sugar to completely dissolve, which creates a SMOOTH drink; and then adding an herb, like mint ~ for example ~ gives the syrup a WOW factor!


I made this recently for our little guy's Gentleman's Tea, and again for friends over Memorial Weekend . . . and it was loved by all!

It's a perfect addition to any Summer-time menu!
 . . . or any menu for that matter (smile!)


Ingredients

3 cups water
1 cup sugar
18 mint leaves, torn
2 cups frozen/fresh blackberries
ice
3 mint sprigs
4 cups natural store-bought lemonade
mint sprigs



Preparation
Bring the water and sugar to boil in a small pot. Stir the water/sugar mixture until the sugar is dissolved then turn off the heat. Add the torn mint leave and give the pot a stir. Allow the simple syrup to cool.

Add the blackberries to a blender. Place a strainer over the mouth of the blender and pour the mint simple syrup into the container. Discard the mint leaves. 

Blend the simple syrup and the blackberries on low speed for just a few seconds at a time, just enough to break the berries apart but not enough to puree them.

Fill a juice pitcher halfway with ice and add the mint sprigs. Pour the lemonade and the blackberry mixture over the ice. Stir the blackberry mint lemonade and add more ice if necessary before serving.
